Yes you can eat meat after the use by date as long as the meat has remained frozen or refrigerated and still good.
The meat will be okay and last in the refrigerator for 3 to 4 days but after that it should be frozen if you want to keep the meat longer and past the use by date.
Meat can last for a year or more in the freezer well past it's use by date.
The use by date does not mean that the meat is bad but is just used as a general guideline to let you know when you should use the meat or eat the meat before it is no longer fresh.
If you want the freshest meat then you should eat the meat before it's use by date but as long as the meat has remained frozen and does not smell bad or look bad the meat is still safe to eat.
