The way Martha Stewart makes her banana cream pudding is to slice and chop the bananas, then whisk sugar, egg yolks and cornstarch and add milk and chopped bananas and then she cooks the mixture and stirs it until it's thickened.
Then Martha Stewart sieves the mixture and adds butter and vanilla and whip heavy cream with sugar.
To make banana cream pudding like Martha Stewart start by slicing and chopping the bananas.
Chop one banana and then thinly slice the remaining 5 bananas; set aside.
Place a fine-mesh sieve over a medium heatproof bowl and set aside.
Then in a medium saucepan, whisk together 1 1/4 cups of sugar, egg yolks, cornstarch and salt.
Next whisk some milk into the egg mixture until combined and stir in chopped bananas.
Then place the saucepan over medium high heat and cook and stir constantly, until the mixture thickens and is bubbling.
This should take about 8 minutes, then reduce the heat to medium low and cook, whisking for 1 minute.
Once that is done you remove the pan from heat and pour the mixture through a sieve into a bowl and use a spatula to push any extra liquid through the sieve and discard the solids.
Stir in butter and vanilla into pudding until it's combined.
Then cover the pudding with plastic wrap and press it directly onto the surface to prevent a skin from forming.
And refrigerate it until it's cooled completely, which takes around 2 hours.
And in a large bowl, beat the heavy cream with reaming 1/4 cup of sugar until firm peaks form.
Then whisk the pudding until smooth and then spoon around a cup of the pudding into the bottom of a large glass bowl and layer about 1/2 of the cookies over the pudding and slightly overlap , followed by about half of the sliced bananas.
Then continue layering the pudding with whipped cream, cookies and sliced bananas.
Top it with about 2 cups of the pudding and half of the whipped cream.
And repeat layering with the remaining cookies, sliced bananas, pudding and cream.
Then refrigerate the pudding for at least 4 hours until set or covered up to overnight and garnish the banana cream pudding with crushed cookies and serve cold.
