If your deer meat is slimy then it means the deer meat is spoiled and no longer fresh or safe to eat.

Fresh deer meat should not be slimy feeling and if it is then it's a sign of spoilage of the deer meat.

Raw venison sausage can be refrigerated for 2 to 3 days before it goes bad.

Cooked venison sausage can be refrigerated for up to a week before it goes bad.

For summer venison sausage it will be good for around a week in the refrigerator but if kept sealed it will last for several months without refrigerating.

However non cured venison sausage always needs refrigeration to prevent spoilage.

You can tell if deer sausage is bad by looking at the deer sausage for a change of color.

When deer sausage goes bad it will turn a gray color and it will also have a bad smell to it and may even be slimy.

If the deer sausage turned gray in color or smells bad or is slimy then throw it out as it's bad and can make you sick if you try to eat it.

Regular deer sausage does have to be refrigerated although if it's the cured or summer type of deer sausage then the summer deer sausage or cured deer sausage does not need refrigerated unless you're not eating it within a few days or if it's not sealed up.

Regular deer sausage that is not cured or any other non cured sausages need to be kept refrigerated to prevent spoilage.

You should not leave frozen sausage out overnight to thaw.

Although it's frozen the sausage will thaw out overnight and once thawed it can begin to grow bacteria and go bad.

To thaw frozen sausage out overnight you should place the frozen sausage in the refrigerator to thaw overnight and then if it's still somewhat frozen by the time you remove it from the refrigerator to cook it you can then use a microwave to defrost and thaw out the frozen sausage.

Cooked sausage can sit out at room temperature for up to 2 hours.

If you have leftover cooked sausage and it's not being served or eaten with 2 hours it should be refrigerated to prevent spoilage.

Cooked sausage can still spoil even at room temperature so always refrigerate the cooked sausage within 2 hours of cooking it.

Raw sausage can also be kept out at room temperature for an hour or 2.

However if it's raw sausage it's best to refrigerate if not cooking it within 20 to 30 minutes.

Raw sausage tends to spoil faster than cooked sausage.

In the refrigerator raw sausage will last for around 2 to 3 days.

In the freezer raw sausage will last for around 6 months to a year.

Cooked sausage will typically last in the refrigerator for up to a week but it's best eaten within a few days of refrigerating it.

The longer the cooked sausage remains in the refrigerator the less tasty it becomes.

Properly stored, cooked sausages will last for 3 to 4 days in the refrigerator although it can remain safe for up to 7 days.

To further extend the shelf life of cooked sausages, freeze them; freeze in covered airtight containers or heavy-duty freezer bags, or wrap tightly with heavy-duty aluminum foil or freezer wrap.
