Cooked sausage can sit out at room temperature for up to 2 hours.

If you have leftover cooked sausage and it's not being served or eaten with 2 hours it should be refrigerated to prevent spoilage.

Cooked sausage can still spoil even at room temperature so always refrigerate the cooked sausage within 2 hours of cooking it.

Raw sausage can also be kept out at room temperature for an hour or 2.

However if it's raw sausage it's best to refrigerate if not cooking it within 20 to 30 minutes.

Raw sausage tends to spoil faster than cooked sausage.

In the refrigerator raw sausage will last for around 2 to 3 days.

In the freezer raw sausage will last for around 6 months to a year.
