You can bake with frozen fruit.
if the baked goods have a long baking time then baking with frozen fruit is fine and the fruit will thaw out as the baked goods are baking.
However if the baked goods have a short cooking time or the food has a short cooking time then you should thaw the frozen fruit out first.
This is because the frozen fruit wouldn't have enough time to thaw out.
But for baked goods that have 30 minutes or longer cooking time then the frozen fruit would have enough time to thaw out from the heat of the oven.
For example if you're baking pies with berries then it's good to use frozen berries and not thaw them first.
In most cases, you don't want to thaw your berries before using them in baking recipes.
Frozen berries in pie? Even better. If you thaw the frozen berries, the moisture content will likely be off, and you'll end up with a soggy pie and blueberry muffins that are blueish green.
A lot of baked goods are made and baked with frozen fruit and they turn out just fine.
I've baked pies and other foods with frozen fruit as well and it has come out just fine.
