Waxy Potatoes are good for a variety of things and can be eaten by cooking them as mashed potatoes, French Fries etc.

Although Waxy Potatoes are most used for dishes where the potatoes need to hold their shape such as potato salad, gratin, smashed crispy potatoes, cacio e pepe potatoes, or a tray of salt-roasted spuds.

Russet Potatoes are not waxy.

The Russet Potatoes fall into the mealy variety of potatoes

Russet Potatoes also have thick skin and a high starch content, but they're low in moisture and sugar.

The kind of potatoes that are waxy are the French fingerling Potatoes, Red Bliss Potatoes, baby potatoes, creamers, Red Adirondack Potatoes, and Russian Banana Potatoes are all waxy varieties of Potatoes.

The waxy potatoes when compared to the regular non waxy potatoes are relatively low in starch and high in moisture.

That helps the waxy potatoes cells stay intact when they're cooked, meaning that slices or cubes of waxy potatoes hold up when boiled or baked.

The Waxy potatoes will hold their shape when boiled—and dressed with a ton of cheese and pepper.

So that makes waxy potatoes more suitable for baking with and cooking with than regular non waxy potatoes and also if you need to watch your starch intake then the waxy potatoes would be healthier for you as they are much lower in starch than regular potatoes are.

The waxy potatoes are just as healthy as regular potatoes as well.
