Silicone will not melt in boiling water since boiling water rarely gets to 500 F or above.

Silicone gloves and silicone tongs are safe to dip into boiling water and will not melt.

Silicone Tongs are also considered safe to use in hot oil that only reaches up to 500 F degrees.

Cooking oil that gets hotter than 500 F degrees can melt the silicone.

However most home cooking fryers only get the cooking oil to a temperature of less than 500 F degrees so it should be no problem using the silicone tongs in your cooking oil.
