You can eat leftover cooked spinach.

Just make sure the leftover cooked spinach has been refrigerated and refrigerate any leftover spinach if not eating it within a couple of hours.

Then you can reheat the spinach in the microwave or on the stove.

Reheating spinach is not recommended but there's nothing wrong with actually reheating leftover cooked spinach.

You can add a bit of water to the cooked spinach and microwave it for 30 seconds to a minute to heat the Spinach back up.

Or put the Spinach into a pot of water and reheat it that way as well.

I have reheated spinach in the microwave and on the stove for years and nothing bad has happened.

Cooked Spinach can be refrigerated and eaten the next day or two.
