You can replace peppers in Fajitas with bell peppers, summer squash, Zucchini Strips, Yellow Squash or just about any other Squash.
You can saute the bell peppers or squash to make them more delicious in the Fajitas.
If you don't like or can't eat other peppers you can also use Poblano Peppers which are a big bell pepper and not hot.
