What should I put in my enchiladas?

When making enchiladas it's good to put Pepper Jack or Mexican-blend shredded cheese in the enchiladas and even cheeses such as cheddar, Monterrey Jack, or other shredded cheeses are great in enchiladas.

Chopped fresh cilantro, sliced avocado, diced red onion, sour cream, crumbled cotija are also good to put in enchiladas.

Some good sides that go great with enchiladas are Chips and Salsa or Mexican Coleslaw or Refried beans with my enchiladas.

But there are other good sides that go well with enchiladas.

Other good sides that go with enchiladas are Guacamole, Mexican Corn Pudding, Jicama with Mango Slaw and Mexican Sweet Potato Salad.

Enchiladas are Authentic Mexican food.

However the authentic Mexican Enchiladas are not cooked in the oven but instead authentic Enchiladas are fried and then dipped in spicy enchilada sauce and then are rolled up with a small amount of meat, vegetables, and/or cheese.

So the enchiladas that are not fried are not considered to be authentic Mexican food but the Enchilada is a Mexican food regardless on how they are made.

Mexicans do eat Enchiladas and it's traditional Mexican food.

I prefer the fried variety of Enchilada over the oven baked Enchiladas but they both are good regardless of how the Enchiladas are cooked.
