Some foods you can serve alongside Mexican Rice are Enchiladas, Burritos, Tacos, Taco Soup, Nacho Cheese and Chili and Chimichangas.
Chicken and Pork also pair well with Mexican Rice.
Spanish Rice is made with Saffron base while Mexican Rice is made with Cumin, Cilantro, peppers and tomatoes.
They are similar but have different ingredients in them and they also taste different from each other.
If you taste Spanish Rice and then Taste Mexican rice it can and will usually taste different to you.

Both Mexican and Spanish rice are good rice dishes to eat in my opinion at least. I could live off of Mexican and/or Spanish Rice as I can't get enough of it.
