When making cheesecake it takes at least 1 hour to set when on the counter and if in the refrigerator it takes the cheesecake up to 2 hours to set.
So you have to be patient when making a cheesecake.
Also do not freeze the cheesecake to try and set it faster as it will ruin the cheesecake and may make the cheesecake soggy.
A cheesecake can set at room temperature or you can put it in the refrigerator to set.
I find that if I leave my cheesecake out at room temperature it sets within 1 hour but if I put it in the refrigerator it takes up to 2 hours to set.
I've never had any issues just leaving the cheesecake out of the refrigerator and allowing it to set.
