You can saute and cook with vinegar instead of cooking oil.

Vinegar is much healthier to saute food with than cooking oil.

Most people commonly saute and cook spinach with vinegar which makes the spinach more nutritious than it would be without using the vinegar.

You can cook spinach in advance and then store the spinach in the refrigerator for up to 2 days.

Spinach can be made and cooked for up to 2 days in advance and then reheated in the microwave or on the stove.

That is as long as you cook the spinach to at least 160 F degrees for at least 15 minutes.
