The skin of the blue potatoes are edible just like regular potato skin is edible.

If you eat the blue potatoes skin you get more nutrients, vitamins and minerals and you get more health benefits from the blue potato when you at both the potato and skin.

I eat the blue potatoes with skin on them and they taste really good.

I never peel the skin from any type of potato as doing so just gets rid of some of the healthy nutrients, vitamins and minerals that are in the potato and skin.

All those healthy foods and nutrients are needed for staying healthy.
