Yes provolone cheese is supposed to stink and smell bad.
However while provolone cheese is supposed to smell somewhat bad it should not smell really bad and if it does smell really bad then the provolone cheese is likely spoiled.
Some cheese do naturally stink and some of them taste bad as well.
Fore example blue cheese to me is very disgusting and makes my stomach hurt and then there was some other cheese which I tried as a kid years ago that make me sick to my stomach just smelling it.
It smelled really bad and I cannot remember what kind of cheese it was but it was disgusting but it was supposed to smell that bad.
Also a lot of provolone cheese is made with lipase which is used in the cheese to give a strong flavor early. Lipase has a tendancy to taste like baby vomit and smell like vomit as well.
Some cheeses do naturally stink and taste bad but they should not be overly sour smelling or bad tasting.
