Yes it is possible to overcook pot roast as well as overcooking roast beef.

If you overcook pot roast or overcook roast beef it leads to the pot roast or roast beef drying out so you don't want to overcook it.

Most pot roasts take around 2 to 5 hours to fully cook depending on the pot roast you have and roast beef takes around 1 hour or so to cook.

Roast does get more tender the longer you cook it.

Especially if you cook the roast in a pot or in a crock pot and the longer the roast is simmering in the pot or crock pot the more tender it becomes.

Even cooking roast in the oven can make it more tender the longer you cook it as long as you keep moisture in the roasting pan.

You can add water to the roasting pan to keep moisture in the roast as it bakes.

Roast Beef takes between 45 minutes to an hour to be fully cooked.

It depends on how well done you want the roast beef to be and if you want the roast beef to be well done then you would cook the roast beef for 1 hour which is 60 minutes.
