Cold white rice is a resistant starch.

White rice is a resistant starch whether cold and uncooked or when it becomes cooked and cooled down.

The cold white rice contains more resistant starch when it has been cooked and then goes through the cooling process.

A resistant starch is  a type of carbohydrate that resists normal digestion in the small intestine and instead ferments in the large intestine.

As the fibers ferment they act as a prebiotic and feed the good bacteria in the gut.

That means that white rice can be hard for some people to digest properly especially if the person has digestive issues.

However white rice is usually easily digested for most people and they are full of nutrients, vitamins, minerals and are very healthy.
