The reason ham is pink and pork is white is because the ham goes through a curing process that makes the ham a pink color.

Ham is just cured pork and the ham is usually white in color before the ham goes through the curing process which then turns the ham a pink color.

Ham is basically preserved and cured pork that is cured and preserved in large quantities of salt and sugar.

Then the ham is usually hot smoked  which means it was usually hung over a hot, smokey fire but out of direct heat) to preserve it more.

This ham smoking process keeps the pink hue of the uncooked meat.

Standard pork, like chops, are raw and are not preserved.

When heat is applied to the meat a chemical reaction happens that turns the hemoglobin white.

This also happens when an acid is applied to meats.
