When making a sponge cake you can make the sponge cake as far as 5 to 7 days in advance of serving it.
But that is only if you freeze the sponge cake after making it if you're gonna make it 5 to 7 days in advance the sponge cake needs to be frozen.
However it's best to only make the sponge cake 1 to 3 days in advance and refrigerate it.
The fresher the sponge cake the better it will be.
So I would only make the sponge cake up to 2 days in advance and sometimes make it 1 day in advance and then it can be left out at room temperature.
When i serve cakes I like to keep them as fresh as possible.

I've heard that a fruit cake can last for up to 20 to 25 years in the freezer but most people would not keep a cake that long.
As long as you eat the cake within a few days of making it or buying it then the cake will be okay.
The longer you wait to eat or serve the cake the more stale it becomes.
So it's best to make cakes the same day or the day before so that it's at it's freshest.
If you're buying a cake it's best to buy the cake the same day or only 1 day before serving it.
