Getting food poisoning from beef jerky is possible but it's also very rare for to get food poisoning from beef jerky.

Food poisoning occurs when the meat or other food gets bacteria on it which then contaminates the beef jerky or other meat or food.

When beef jerky is made and dried out the bacteria that could be present on it at the time is then killed off.

So as long as no other bacteria gets on the beef jerky you should be safe from food poisoning.

If you keep any beef jerky sealed before eating it such as the store bought beef jerky then it will last for up to a year and sometimes longer.

But once you open the beef jerky then bacteria can start to form on it and then you might get food poisoning.

Homemade beef jerky is more likely to give you food poisoning than store bought beef jerky if the homemade beef jerky is not made correctly or dried out enough.
