The Rind on Gouda is edible and you can either leave the rind on the Gouda or you can remove it.
Some people find the rind on the Gouda Cheese to be too strong or just don't like the taste of the rind on the Gouda.
Most people do remove the rind from the Gouda which is the most preferred way of eating and serving Gouda Cheese.
It's all up to the individual person as some may like the Gouda rind and some people may hate it.
Me I personally hate the taste of the Gouda rind but love the Gouda itself.
So I always remove the rind from any Gouda I eat.
My husband however loves the rind on the Gouda and eats it.
