No you should not and cannot eat cured salt pork raw.

The curing process of the salt pork does not cook it or kill bacteria and does not make it safe to eat raw.

Always cook the cured salt pork before eating it.

Bacon is a salt cured meat from pigs and must also be cooked before eating it because it can cause sickness and even possible food poisoning.

Always cook the cured salt pork or any bacon before eating it.

You do have to refrigerate salt pork to prevent the salt pork from going bad.

All meats including salt pork should either be refrigerated or frozen if not being cooked with or eaten within an hour.

If you leave the salt pork out too long it can grow bacteria and make you sick.

So always refrigerate the salt pork if not using it that day.

Salt pork will last for up to 2 months in the fridge.

If you want to keep the salt pork longer than 2 months you should freeze the salt pork instead of refrigerating the salt pork.

When frozen the salt pork will last in the freezer for 6 months to a year.

It's best to use the salt pork within 6 months if frozen and it's best to use the salt pork within 1 month when refrigerating it.

However the salt pork will last for a couple of months even when refrigerated.

It will taste better if used and eaten within 1 month of refrigerating it.

If you leave the salt pork longer than 2 months in the refrigerator then it can go bad and grow bacteria and should be thrown out to prevent illness.

But in the freezer the salt pork can last up to a year but it's best used before the 6 months.
