Beets that have a bit of mold on them are safe to eat as long as you cut off the mold on the beets.

So yes you can cut the mold off the beets and eat the rest of the beets and they will be fine.

There's no need to throw out the entire beets just because the beet or beets have a bit of mold on them.

Just cut the bad moldy part of the beet off and then inspect the rest of it and if it smells good or has no other signs of mold then the beets are safe to eat.

I've cut mold off beets as well as potatoes and other foods and ate the rest.

Just because it partly has mold on it doesn't mean the whole thing is bad and needs thrown out.

The beets will be safe to eat as long as you cut the mold off the beets.

Beets are naturally high in nitrates, which are turned into nitric oxide in the body.

Raw beets contain more vitamins, minerals and antioxidants than cooked beets.

Like many vegetables, the longer you cook beets (especially in water), the more of the colorful phytonutrients leach out of the food and into the water.

Retain the good-for-you nutrients in beets by roasting them or sautéing them instead.

You can freeze cooked beets.

When you freeze cooked beets just make sure the cooked beets have cooled down and then put the cooked beets in a Ziploc bag or a freezer safe container.

Frozen cooked beets will last for around 6 months before they start going bad and the frozen cooked beets will taste just as good as freshly cooked.
