When it comes to sourdough starter and Levain there really is no difference between the two.

The only real difference between sourdough starter and Levain is in the name as some places and people call it Levain and some people call it sourdough starter.

The sourdough starter and Levain and essentially the same thing and is used to start sourdough with.

Both the sourdough starter and Levain are made from the ingredients flour, water, and wild yeast, and both sourdough starter and Levain are used to ferment and flavor sourdough bread.

So you can use either Levain or sourdough starter when making sourdough bread and they will turn out the same.

Since the only difference between the sourdough starter and Levain is in the name.
