Biltong is made from steak that is dried which is then cut into long Jerky like pieces to eat.

The biltong is also marinated in vinegar and spices that add to the flavor of the bilton meat.

Biltong is also hung and air dried while the beef jerky is cooked on a rack to dehydrate it or smoke it.

So the main difference between jerky and biltong is that biltong is steak meat that is dried while the Beef Jerky can be made from meats such as deer meat, beef, turkey etc.

The beef jerky or other types of jerky are also sometimes made using a dehydrator for meat and sometime smoked while the biltong is hung and dried and not dehydrated in a dehydrator.

The taste is somewhat similar but also somewhat different between the beef jerky and biltong.
