IHOP does use real eggs if you specify that you want real eggs when you order.
Otherwise the eggs that IHOP normally uses are powdered eggs or even liquid eggs.
I used to work as a cook in IHOP and we would use either the liquid form of eggs or powdered eggs to make the eggs.
But the IHOP I worked at had real eggs that came from the shell and when a customer specified it we would make the eggs for them using real eggs and not use the powdered or liquid form of eggs.
IHOP doesn't really let that information out to many people and not many customers know that the eggs are liquid eggs or powdered eggs.
However they do have eggs in a shell and will make your eggs or omelet using those real eggs but you have to let them know you want real eggs.
