Yes Spelt flour needs to be refrigerated to make it last longer.
However you can keep Spelt Flour in airtight containers and store the Spelt Flour in a cool dark place and it will keep for a few months that way.
But when you refrigerate the Spelt Flour it should keep for 6 months or longer.
Spelt Flour keeps best when kept in airtight sealed containers and kept in the refrigerator.
If you plan to use the Spelt Flour within a few days then leaving it out on the counter is okay but if you're not gonna use the Spelt Flour within a few days it needs to be refrigerated or at least stored in a cool dark place.
Storing the Spelt Flour in the airtight container in the refrigerator also keeps any bugs out of it.
