Are oxidized potatoes safe to eat?

Oxidized potatoes are safe to eat and there's no harm in eating them.

The oxidation process of the potatoes occurs when the potatoes are peeled or sliced and exposed to air and it's a natural process.

Although the oxidized potato looks awful and non appetizing the oxidized potato is still safe to eat.

There's no need to throw the oxidized potatoes away as there's no harm in eating them.

Even when the potatoes have turned grey in color after cutting them or peeling them they are not unsafe to eat.

Just continue to cut them up or cook them like normal and although the taste may be a bit different the potatoes that are gray or have oxidized are still good and safe to eat.
