Potatoes will last for up to 2 weeks at room temperature and unrefrigerated.

The best way to store raw potatoes is to place them in a cool dark place which helps to extend the shelf life of the potatoes.

When stored in a cool dark place the potatoes will last for up to 2 to 3 month however it's best to eat them before then.

You can also refrigerate the potatoes but refrigerating the potatoes will cause some of the starch to turn into sugar which can lead to a sweeter potato.

That is okay for some people but others may not like it.

Or you can cut the potatoes up and blanch the potatoes and then freeze them for use as french fries or other cooked potatoes.
