Green Jalapeno peppers are peppers that are picked early in the ripening and growing process and they are less hot as they are picked before they age more to get hotter.
The red Jalapeno Peppers are just the same green Jalapeno Peppers that are left on the vine to ripen more and as they age and turn red the Jalapeno peppers get hotter.
But both red and green Jalapeno Peppers are the same type of peppers but just the red Jalapeno Peppers are older and aged more and are more ripe than the green ones.
I've always picked any Jalapeno Peppers while they were still green because if I left them on the vine longer they would get hotter and would be too hot for me.
