How do you keep fries from getting soggy?

To keep fries or french fries from getting soggy while cooking them you should draw out some of the moisture from the french fries before cooking the french fries.

When you draw out some of the moisture from the fries before cooking them they won't get as soggy.

To draw out the moisture from your fries before cooking them salt the fries heavily on all sides and place the fries in a colander to drain for 15 - 20 minutes.

Don't worry about minor discoloration of the fries as cooking the fries will whiten them again.

Remove the water and remaining salt with lots of paper towels wiping off each individual fry til dry but do not rinse!

Carefully fry in oil that has reached 350° until lightly brown, stiff, and crispy  a single layer in a deep skillet is best so you can watch and turn them to cook evenly.

They will not require much additional salt when done. Strain the oil after it cools and fridge it in a jar to use again.

You can also bake fries by placing them in a baking sheet and place them into the oven at 350 F for 10 to 15 minutes or until they are baked enough.

I like baking fries more than I do deep frying fries but both ways are good.
