What is the difference between ripened and unripened cheese?

The difference between ripened and unripened cheese is that one type of cheese ages and the other does not before it's sold.

The ripened cheese is cheese like Parmesan Cheese or Cheddar Cheese, can be stored or aged until it reaches the desired taste.

Unripened cheese is cheese like cottage cheese, cream cheese etc that is sold right after it's made and not aged like the other cheeses.

So cheeses like Cheddar Cheese, Parmesan Cheese and other harder cheeses are the ripened cheeses and the unripened cheeses are cheeses such as cream cheese and cottage cheese.
