In my experience unopened packages of lunch meat will last up to 10 days in the refrigerator before it goes bad.
Once you open the lunch meat package the lunch mean usually remains good for 3 to 5 days before it starts to dry out and turns bad.
If you want to keep the lunch meat longer than a week when the lunch meat has been unopened you should freeze the lunch meat instead.
When frozen the lunch meat will keep for up to 6 months and sometimes as long as a year.
You can also freeze any extra opened lunch meat using some Ziploc bags and the lunch meat will last 6 months to a year.
But when you just refrigerate the lunch meat it doesn't last as long as it does in the freezer.
