Are sprouting potatoes safe to eat?

As long as the sprouting potatoes are firm to the touch and they don't look too wrinkly and shriveled up and they smell okay the sprouted or sprouting potatoes are still safe to eat.

If the potatoes start smelling, get too soft or shrivel up too much then the potatoes are bad and should be thrown out.

Potatoes that have gone bad will usually have a bad smell to them and have some juices coming out of the potatoes that indicate they are bad and should be thrown out.

But if the potatoes are just sprouting they are safe to eat.

You can just remove the potato sprouts and other soft spots of the potato and it will be okay to eat.

Sometimes I'll have a few potatoes that are starting to get bad spots on them and I just cut the bad spots off the potatoes and cook the rest of the potatoes and they are still okay to eat.
