Potatoes that turn black are safe to eat as long as they don't smell bad.

The potatoes can turn black due to contact with the oxygen in the air and sliced potatoes are prone to turn black due to the contact with the oxygen.

The potatoes even when black are not very good looking but they are still safe to eat when they turn black as long as they do not smell bad.

I've sliced potatoes that turned black before and nothing bad had happened although they didn't taste that good but they were still okay to eat.

If you cook potatoes and have leftovers make sure to refrigerate the cooked potatoes so that bacteria doesn't grow on them.
