The difference between single cream and double cream is in the thickness and what it's used for.

Single Cream is a rich version of milk and is used for mainly adding to coffee or pouring on cakes and other foods and is not meant to be cooked with.

Double Cream is thicker than single cream and can be used for cooking with and can be used in recipes that require boiling of the double cream.

The double cream will not curdle like the single cream will and has around 48% fat content and single cream has around 18% fat content.

You must use double cream when cooking recipes that call for double cream because the single cream will curdle and cannot be boiled.
