How do you know if your fish is overcooked?

When fish is overcooked the skin of the fish may be too crispy or may have turned too brown or burnt.

When fish is cooked properly and well done the fish will turn flaky and when the fish has been overcooked it may be more hard to bite into.

The fish when cooked correctly should be easy to chew and bite into and should not be tough to bite into.

If the fish seems too tough to bite into or break apart with a fork then you likely overcooked the fish.

When you're cooking fish and the fish has reached the correct cooking temperature and when the fish is well done the fish will become opaque and flake which means the fish is well done.

Still even if it's not well cooked you usually will not get sick from eating partially raw fish as long as you're reasonably healthy.
