Blue Cheese can also be made from other milk such as goats and sheep milk and the blue cheese should say on the package whether it's made from cow milk, sheep milk or goats milk.
The mold Penicillium is what gives the blue cheese it's flavor and color and green, gray, blue, or black veins or spots of mold throughout the blue cheese.
I can't stand the taste of blue cheese but my mom loves the blue cheese on just about everything.
It's can take awhile to get used to the taste of blue cheese but some people love it and some people never get used to the taste of blue cheese.
