Should sauerkraut be fizzy?

When sauerkraut is fully done fermenting and ready to eat the sauerkraut should not be fizzy.

If the sauerkraut is still fizzy then it's usually a sign that the sauerkraut has not fully fermented enough and it's either still in the active first stage or the CO2 isn't being released.

So if the sauerkraut is fizzy it's either not fermenting right or just not ready yet and if it's just not ready you need to let the sauerkraut ferment a bit longer.

Fermenting sauerkraut can take from 5 to 10 days and sometimes up to 14 days depending on how much sauerkraut you're making and fermenting.

Also if you smell a beer like smell from the fermenting sauerkraut it's usually due to yeast which is a normal product of fermentation and nothing to worry about.
