What is evergreen content when referring to seo?

When building a website or blog I hear people saying you should write content that is evergreen?

What does it mean to write evergreen content?

Evergreen content is blog or website content that will be relevant for years to come.

An example of non evergreen content would be writing a blog post about the latest Iphone or computer operating system.

That content may not be relevant or searched in 8 years or so. But content such as how to garden would be Evergreen content and people will be gardening for years to come. Even 1,000 years from now.
