If you have hot sauce that is past it's expiration date or use by date and you eat it then there's nothing that's gonna happen to you if you do eat the expired hot sauce.
The use by date or expiration date on the hot sauce is just a general guideline as to how long it will stay fresh for and it's best to eat the hot sauce before the use by date for the freshness.
But hot sauce can stay safe to eat for 3 to 4 years even if you open the hot sauce bottle as long as you keep the hot sauce bottle sealed after using it.
So even if the hot sauce is expired and it still tastes good then it's still safe to eat and you should not get sick.
