Vacuum sealing food while it's still hot can cause bacteria growth on the food so you should wait until the food is cooled down and then vacuum seal the food once it's cooled down.

Once you allow the food to cool down to room temperature or at least where it's not really hot then you can vacuum seal the food and place it in the refrigerator soon after to prevent bacteria growth on the food.

Keeping the food vacuum sealed makes the food last up to 5 to 6 times longer than storing the food in the refrigerator without vacuum sealing it.

The Vacuum sealing of the food also helps keep the food fresher longer so it's a great way to cook and seal and store food for longer periods of time.
