Goat Cheese can certainly be frozen and in fact if you do freeze the goat cheese the goat cheese will last longer.
When freezing goat cheese make sure to keep the goat cheese tightly sealed and wrapped and it should retain it's moisture and texture and be just as fresh as before your froze it.
Then you can place the goat cheese out on the counter to thaw or defrost the goat cheese in the microwave on the defrost setting for 10 to 30 seconds.
I've kept goat cheese frozen for up to a year without it going bad or losing it's freshness.
