How to reduce starch in potatoes?

Is there a way to reduce the amount of starch in potatoes?

To reduce the starch in potatoes you can soak the potatoes in water overnight and remove the skin by peeling it off.

Running the potatoes under water for a few minutes can also remove at least some of the surface starch of the potatoes to make them less starchy but soaking the potatoes overnight remove more of the starch.

Cutting the potatoes up before soaking them can also remove more starch than soaking whole potatoes.

I cut my potatoes up and then soak the potatoes in the bowl of water overnight which helps to reduce the starch since I'm not supposed to have too much starch in my diet.

Just cut the potatoes and leave them overnight in the bowl of water and the starch will be removed from the potatoes by the next morning and be ready to cook.
