The reason why doctors say not to eat pork is because pork is high in saturated fat and sodium, which can increase your risk of heart as having a potential link to certain cancers.

Also pork that is undercooked carries risks of parasites like trichinosis and even bacteria.

Although now with modern production and modern farming of pigs, the risk of bacteria and parasites from pork is reduced and lower now than it was before.

Pork, especially the fatter cuts and processed bacon and sausage is high in saturated fats, which raise your bad or LDL cholesterol, which is a risk factor to heart disease.

The sodium in processed pork can also contribute to heart disease, especially when eaten in excess.

And when your gut bacteria break down the nutrients in pork and other red meat, they form TMAO, which is linked to hardened arteries, strokes and heart attacks.

And high intake of pork and other processed red meats, is also associated with an increased risk of cancers like breast cancer, colon cancer and kidney cancer.

Eating raw pork or undercooked pork used to be a major source of trichinosis, which is a roundworm infection, although it's rare now in commercially raised pork due to better farming and production practices.

Pork can also carry the parasite toxoplasmosis, which can cause inflammation and fatigue.

Pork can also cause taeniasis, also known as pork tapeworm, which can cause digestive issues and even cause epilepsy if the larvae develop in your brain, which is called neurocysticercosis.

And pork consumption has also been linked to a liver infection called hepatitis E.

Pork is generally safe to eat though, but it should be consumed in moderation.
