Cucumbers are not a leafy vegetable as cucumbers are actually technically a fruit as botanically cucumbers are considered a fruit.

Botanically a fruit is the seed bearing structure that develops from the ovary of a flowering plant, and by this definition, cucumbers are fruits because they contain seeds and grow from the cucumbers plant's flower.

However by culinary definition, and in cooking, cucumbers are treated as a vegetable and they are often eaten in savory dishes  salads and are often grouped with other green vegetables.

Pickles are also made from cucumbers.

Leafy green vegetables are vegetables like spinach, kale and lettuce, which means the edible parts are the leaves of the plant.

The 5 leafy green vegetables are collard greens, Swiss Chard, Romaine lettuce, kale and spinach.
