Yes you can freeze slices of cheese although when you freeze them the cheese slices can change taste, texture and could become crumbly and not be as smooth as they were before freezing.
If you want to use the cheese slices for sandwiches then it's best to just refrigerate them however if you want to use them for grilled cheese sandwiches or something else then freezing the cheese slices won't do no harm.
