You can freeze potatoes although the potatoes should be cut up and blanched prior to freezing.
Freezing whole potatoes are unblanched potatoes is not recommended as they can and will become mushy and soggy.
If you need to freeze potatoes for use later in cooking you should first chop up, cut or shred the potatoes.
Then blanch the potatoes and place them in a freezer safe bag or freezer safe container.
The blanched potatoes will last for around 6 months to a year.
To blanch the potatoes before freezing them you partially cook the cut up potatoes in some boiling water for a short time.
Then after partially cooking the potatoes you immediately plunge the partially cooked potatoes into some ice water which stops the cooking process.
While preparing the potatoes for blanching start by filling a large pot with some water and then bring the water to a rolling boil.
Then add the cut potatoes to the boiling water and cook them for around 2 to 3 minutes.
After cooking the potatoes in the boiling water for a few minutes you immediately drain the potatoes from the boiling water and then transfer them to a bowl of ice water to stop the cooking process.
Then once the potatoes are completely cook you drain the potatoes and then pat them dry with a paper towel.
Blanching the potatoes helps ensure the potatoes cook evenly when finishing them such as with frying or roasting and prevents discoloration and prevents the potatoes from turning brown and mushy or soggy in the freezer.
