Lots of vegetables have starch but some vegetables such as lettuce, peppers, asparagus, onions, eggplant and artichokes, are very low in starch.
The Vegetables that are high in starch are Corn, parsnips, green peas, potatoes, pumpkins, winter squash and yams.
Other foods that are starchy are Amaranth or Chinese spinach, Artichoke, Artichoke hearts, Asparagus, Baby corn, Bamboo shoots, Beans (green, wax, Italian) and Bean sprouts.
