You can eat 2 year old ramen noodles as they are most often safe to eat but they won't taste as good and be stale.

As long as the ramen noodles have remained sealed they should not cause you any harm.

I've accidentally eaten 2 year old ramen noodles before and I didn't get sick.

Cup of noodles and ramen noodles do expire and when expired the cup of noodles start to become stale.

The shelf life of cup of noodles is around 8 months although they are still safe to eat after that time but they won't taste as good.

If your cup of noodles are a year past it's expiration date they will be stale but safe to eat but it's best to throw them out.

If the cup of noodles are only a month or two months past expiration they are still tasty enough to eat.

If the cup of noodles tastes bad or smells bad then they should be thrown out.
